There are numerous factors that affect the flavor of coffee. Plant variety, soil, altitude, and weather are all factors in the flavor of coffee. However, some regions are very distinct with their flavor profiles.
Variations in the way cherries are processed after being picked also contribute to differences in flavors and nuances.

Volcanica Ethiopian Sidamo
- Flavor Notes: Honey, Jasmine, and Stone Fruit
- Processing: Washed – Dried on Raised Beds
- Roast: Medium / Light Roast
- Additional Info: pH 5, Single Origin
Ethiopia Sidamo Coffee is fruity with berry and honey notes.
This single origin coffee is produced by local villagers on small garden plots where other subsistence crops are grown.
We think this one takes the prize because of the consistent product that Volcanica delivers. They know their beans!
Klatch Sumatra Mutu Batak
- Flavor Notes: Cacao, Cedar, and Bell Pepper
- Processing: Wet Hulling or “giling basah” -similar to wet processing but the end results and characteristics are very different
- Roast: Medium
- Additional Info: From the Lintong Region
Described by Ken Davids of Coffee Review as “… A fine Sumatra, simultaneously expressing the pungent, full, resonantly earthy genius of the type, while lifting it with refreshing lightness of complexity vivacity.”
The Sumatra Lintong Mutu Batak comes from the area of Lintongnihuta in the Provinsi Sumatera Utara which is the Northern Sumatra Province. Located on the shores of Lake Toba, the largest volcanic lake in the world, the soil is exceptional for growing coffee.
These beans are produced by Wet Hulling or “giling basah”. This is similar to wet processing but the end results and characteristics are very different. After de-pulping, the farmer stores the coffee overnight, allowing it to ferment, and washes it the following day.
Pure Origin Kenya
- Flavor Notes: Wine
- Roast: Light
- Additional Info: Grown and processed in the Nyeri Region of Kenya
As one reviewer put it, “You do not have to over-roast to hide the flavor.” This is processed and roasted to obtain maximum original flavor.
This is a light roast so if you like it dark this will be very different. Very smooth finish.

Klatch Brazil Diamond Reserve

- Processing: Natural Process developed by Instituto Agronomico (IAC)
- Roast: Medium
- Additional Info: Blend of beans from the Cerrado Mineiro region
Klatch Brazil has a balanced body and a long finish.
The dry climate eliminates problems during the drying process that areas with high humidity contend with.
Volcanica Dominican
- Flavor Notes: Strawberry, Stone Fruit, Smooth, and Balanced
- Processing: Red Honey Natural Process, Raised Bed Drying
- Roast: Medium/Light Roast
- Additional Info: pH 4.8, Single Origin, Microlot
Volcanica Dominican Coffee uses the Red Honey Process also known as the pulped natural process. This process is done by repulsing the coffee cherries and allowing them to dry without washing. An incredible technique which which helps to develop the fruity flavors.
Boca Java Guatemalan Adventure
- Flavor Notes: Citrus, Smoky Tones, Toffee
- Processing: Washed
- Roast: Medium
- Additional Info: Bourbon, Caturra Varietal
Boca Java Guatemalan Adventure is aptly named for the flavor complexity of this single origin bean. It is noted for exceptional sweetness.
Boca Java Guatemalan coffee is grown in the Huehuetenango, Antigua, Atitlan, Guatemala region which has an altitude of 1500 – 1700 meters.
Pure Origin Honduras
- Flavor Notes: Caramel
- Roast: Medium
- Additional Info: Small family farms, microlots
Grown and processed in Inibuca, Honduras these beans are hand picked and processed by family tradition passed down for generations.

Klatch Colombia Narino Buesaco

Boca Java Mizner Estate Coffee

Boca Java Mizner Estate Coffee is a single origin from Curah Tatal and Kayumas Villages in Java, Indonesia. Their altitude is 1000-1600 meters.
It has a lower acidity with a clean, smooth, and full-bodied taste.
